Vegan apple cake

Extremely juicy and soft apple cake is a delicious and wonderful dessert, perfect for all apple and cinnamon lovers!

This wonderful apple cake is made with apple puree, which gives this dessert an excellent taste, softness and makes it extremely juicy. In combination with cinnamon, you get the perfect winter dessert, great for the cold and snowy days. It goes especially great with some hot tea or coffee.

It is incredibly easy to prepare, because all you have to do is just mix all of the ingredients in one bowl, pour into a pan and bake. You can make this dessert in any shape you like (in a cake pan, bread pan…). For an even more exceptional look and taste, pour some melted vegan white chocolate over the whole cake.

Ingredients and instructions

For this juicy and delicious apple cake, you only need 10 basic ingredients:

  • flour– white or semi-white,
  • baking powder,
  • baking soda,
  • cinnamon,
  • erythritol– you can also use white, brown or coconut sugar,
  • lemon,
  • apple puree,
  • plant based drink of your choosing,
  • margarine and
  • vegan white chocolate– you can also use some other type of vegan chocolate.

Put flour, baking powder, baking soda, cinnamon and erythritol in a bowl and mix well. Add lemon juice, apple puree, plant-based drink and margarine and mix well with a whisk or electric mixer. Pour the batter into a mold coated with margarine and bake for 30 minutes at 180 °C (360 °F). When the cake is baked, remove it from the mold and place it on a cooling rack. Pour over melted chocolate, slice and enjoy!

Ingredients
  

  • 225 g 1 1/2 cup white or semi-white flour
  • 10 g 1 tbsp baking powder
  • 5 g 1/2 tbsp baking soda
  • 1 teaspoon cinnamon
  • 60 g 1/3 cup erythritol
  • juice of 1 lemon
  • 220 g 1 cup apple puree
  • 250 ml 1 cup plant based drink
  • 40 g 3 tbsp margarine
  • 40 g 1/4 cup vegan white chocolate (for topping)

Instructions
 

  • Put flour, baking powder, baking soda, cinnamon and erythritol in a bowl and mix well.
  • Add lemon juice, apple puree, plant based drink and margarine and mix well with a whisk or electric mixer.
  • Pour the batter into a mold coated with margarine and bake for 30 minutes at 180 °C
    (360 °F).
  • When the cake is baked, remove it from the mold and place it on a cooling rack. Pour over melted chocolate, cut and enjoy!
