Vegan almond-coconut fudge

Quick and easy gluten-free creamy & high-protein dessert for all coconut and almond lovers. If you love salted caramel-flavored desserts, you should try these divine slices!

Fudge is a delicious caramel dessert made with coconut oil and almond butter with divine taste and creamy texture. It is made very quickly and doesn’t contain flour, so you can enjoy it even if you are avoiding gluten. The texture of this sweet treat will definitely take you by surprise, as it is very creamy, silky and soft and the slices just melt in your mouth! They are drizzled with melted dark chocolate, which brightens up the dessert and creates a beautiful pattern and adds a nice chocolaty touch. Fudge tastes like salted caramel and if you cut it into smaller cubes, you get delicious and healthy caramel candies without refined sugar! It is sweetened only with maple syrup, which adds a nice nutty flavour.

 Ingredients and procedure

You only need 5 ingredients for this simple dessert or snack!

These ingredients are:

  • coconut oil,
  • almond butter – you can also use peanut butter,
  • maple syrup,
  • vanilla extract and
  • salt

The preparation is very simple, all you have to do is put all ingredients in a pot and heat them until the coconut oil melts and mix well. Pour the liquid mixture into a square pan or baking dish lined with baking paper and allow to cool slightly, then place in the freezer for at least 2 hours so it can harden. Cut it into squares and decorate. We drizzled it with melted dark chocolate, but you can decorate it as you like, top it with white chocolate, almond butter, tahini, add sliced ​​almonds, and so on. You can also cut it into smaller cubes and enjoy it as candy. Keep the fudge in a sealed container in the refrigerator, where it stays good for a long time.

Ingredients
  

  • 50 g coconut oil
  • 120 g almond butter
  • 40 g maple syrup
  • 1 teaspoon vanilla extract
  • pinch of salt

Instructions
 

  • Put all the ingredients in a pot and mix.
  • Heat over low heat until the coconut oil is melted and stir.
  • Pour into a 12 cm x 12 cm square dish covered with baking paper.
  • Allow to cool slightly, then place in the freezer for 2 hours.
  • Cut into slices and drizzle with melted dark chocolate.
  • Store in a sealed container in the refrigerator.
