Vegan potato goulash

Potato goulash is a delicious cozy lunch that will warm you up on cold autumn days.

Potato goulash is a healthy stew made with lots of potato, veggies and spices that is full of flavour. Our version is fat-free, gluten-free and very easy to prepare, it only takes about half an hour to prepare and then all you have to do is wait for it to cook. While cooking goulash, wonderful smell of spices and vegetables will flood your apartment. The combination of cumin, nutmeg, sweet and smoked peppers is truly amazing and emphasizes an exceptional taste of goulash that you will not be able to resist. Goulash is perfect as a lunch or even dinner as it will satiate you well, provide lots of vitamins and warm you up. You can enjoy it on its own or with a slice of bread.

Ingredients and preparation

To prepare this delicious dish, you only need veggies and spices. The main ingredients are potatos and onions. When you add some more veggies and a lot of spices, you get an amazing combination that gives goulash it’s unique taste that cannot be resisted. These spices are cumin, nutmeg, sweet and smoked peppers, dried basil and oregano. Preparation is really easy, so even complete beginners in the kitchen can easily prepare it. First, cook the onions for 5 to 10 minutes, add all of the vegetables and pour over the water. Cook for 30-40 minutes, add all the spices and tomato sauce, cook for another 10 minutes and there you have it, healthy and delicious lunch!

Vegan potato goulash

Servings 4 people

Ingredients
  

  • 270 g onion
  • 2 dl water
  • 4 cloves garlic
  • 800 g potatoes peeled
  • 100 g leeks
  • 150 g carrots
  • 2 g fresh parsley
  • 2 bay leaves
  • 7 dl water
  • 100 g tomato sauce

Spices

  • cumin
  • nutmeg
  • pepper
  • sweet paprika powder
  • smoked paprika powder
  • dry basil
  • dry oregano
  • salt

Instructions
 

  • Peel and finely chop onions, put them in a pot along with 2 dl of water and bring to a boil.
  • Cook for 5 to 10 minutes to let them soften, then add grated garlic, sliced raw potatoes, carrots, chopped leeks, parsley, bay leafs and pour in 7 dl of water.
  • Cover and bring to a boil, then reduce the heat and cook for 30-40 minutes.
  • When the potatoes are soft, add tomato sauce and all of the spices to taste, stir and cook for another 10 minutes.
  • Serve on its own or with bread.
