The creamiest pumpkin soup ever!
This pumpkin soup is the best comfort meal and great all year around.
It is incredibly creamy, really delicious and full of flavour. It’s also full of vitamins to boost your immune system! Since it’s really simple to make, you just have to try it out! This soup makes healthy and light lunch or dinner and you can dive into it without any guilt! Pumpkin makes it really creamy and also gives a nice sweet flavour to the soup.
It’s made completely without any cream (coconut cream, soy cream) and it’s still super creamy and delicious! You can make amazing soup with simple ingredients!
We really like something crunchy in our soup so we usually add some chickpeas, sunflower seeds or pumpkin seeds into it. It’s also great with a little bit of pumpkin oil on the top. It really put the whole soup together!
You can cook or roast your pumpkin. It’s great either way. Canned pumpkin purée also works well, if you don’t have a lot of time or you can’t get a hold of a pumpkin.

Pumpkin soup
Ingredients
- 700 g pumpkin
- 1 leek
- parsley
- 2 carrots
Spices
- ginger
- turmeric
- cumin
- dry oregano
- dry basil
- 1 bay leaf
- 2 cloves garlic
- salt
- black pepper
Instructions
- Cook pumpkin, leek, carrots and parsley.
- Remove parsley and blend all of the other cooked ingredients(including some water in which it was cooking).
- Saute garlic with turmeric and ginger on a little bit of olive oil.
- Add blended ingredients.
- Add all of the spices.
- Cook it for a bit longer.
