Fluffy apple pancakes are a great and delicious autumn breakfast for a perfect morning.
In the autumn, when there is an abundance of apples, we like to use them for baking and cooking, because they are an amazing ingredient in desserts, because they are very sweet, juicy, healthy and delicious. You can prepare delicious apple pie, apple strudel, cake, donuts and more! This time we made these fluffy, juicy and extremely soft pancakes with apples. Apples, cinnamon and lemon create a delicious autumnal combination of flavours that blend perfectly and create a divine flavour. Apples make pancakes very juicy as they are very finely grated and full of liquid and they also add lots of vitamins and minerals.
Pancakes are great for breakfast, especially on the weekends when we have more time to prepare and enjoy breakfast and can afford a little pampering. They are also great as a dessert after lunch or even dinner. They are already amazing on their own, as they contain apples, cinnamon and lemon, which give them an intense flavour and apples also provide the sweetness. But you can make them even better by sprinkling some erythritol on top, as granules add a nice crispy. You can also pour maple syrup over them for even more intense taste and sweetness.
Ingredients and instructions
Making pancakes is very simple and won’t take you a lot of time. You just need 8 simple ingredients,which you probably already have at home for these extremely tasty pancakes:

- spelt flour,
- semi-white flour,
- baking powder,

First, finely grate apple and squeeze the excess liquid, then add the lemon juice and plant-based drink of your choice and mix. In another bowl, mix all dry ingredients, add the mixture of wet ingredients and mix everything well together. Grease the pan with some coconut oil and heat it, then pour the batter into a form of small circles and bake for around one minute on each side.
Then it’s time to decorate pancakes, you can sprinkle them with erythritol, sugar, add caramelized apples, pour with maple syrup…

Vegan apple pancakes
- 1 apple 200 g with peel
- juice of half a lemon
- 150 ml oat milk
- 50 g spelt flour
- 50 g semi-white flour
- 8 g baking powder
- pinch of salt
- ½ teaspoons of cinnamon
- Peel an apple, grate it and squeeze the juice. Add the juice of half a lemon and oatmeal and stir.
- In another bowl, mix flour, baking powder, salt and cinnamon.
- Add the liquid mixture to dry mixture and whisk well.
- Let it rest for 10 minutes, then heat a pan and grease it with teaspoon of coconut oil.
- Pour the batter into a hot pan in the form of small circles and bake for about a minute on each side.
- Sprinkle the baked pancakes with erythritol or sugar and serve.
