Pancakes with caramelized apples

If you are craving some fluffy and delicious pancakes, look no further, this recipe is what you’re looking for. These are the best pancakes you’ll ever try! They are so simple to make and with caramelized apples they are irresistable.

These pancakes just scream fall! Apple and cinnamon are one of the best combos this time of the year or actually at any time. Our whole apartment smelt so good when we were making this. They are a perfect cozy breakfast or even dessert, you name it. And it is so simple to make them, you only need 5 ingredients.

Caramelized apples

We like to make pancake recipes simple and then go all out with the toppings. These caramelised apples are definitelly one of our favourites. We add them to oatmeal, ice cream or just eat them on their own, cause they are just so delicious!
And the best think is that they are so easy to make, it only takes a few minutes, you just have to try them!

Pancakes with caramelised apples

Very simple pancakes with just a few basic ingredients.
Course Breakfast
Servings 5 pancakes

Ingredients
  

Pancakes

  • 70 g flour
  • pinch of salt
  • 1 teaspoon baking powder
  • 120 ml rice milk
  • ½ teaspoon cinnamon

Caramelised apples

  • 1 apple
  • 1 teaspoon cacao butter or coconut oil
  • water
  • ½ teaspoon cinnamon
  • 1 teaspoon maple syrup

Instructions
 

Pancakes

  • Mix all of the dry ingredients.
  • Add rice milk and mix until you get a smooth batter.
  • Let it rest for a few minutes and then make pancakes.
  • In a medium pan melt coconut oil and add batter, around 2 or 3 tablespoons.
  • Cook about 1 minute, until the surface have some bubbles.
  • Flip pancake around and cook another 1 or 2 minutes.

Caramelised apples

  • Cut apple into small cubes.
  • Put them on hot cacao butter (or coconut oil).
  • Add a little bit of water and cook them until they become soft and all the water evaporates.
  • Add some cinnamon and maple syrup and cook it all together for a bit.
