Vegan potato croquettes

Vegan potato croquettes

Tasty and crispy croquettes are great as a side dish, snack or main course.
Servings: 20 croquettes

Ingredients
  

Potato dough
  • 700 g potatoes
  • 1 tsp salt
  • 1 tsp dried parsley
  • 1 tsp garlic powder
  • a pinch of nutmeg
  • a pinch of black pepper
  • 1 tbsp olive oil
Breading
  • 50 g flour
  • ½ tsp turmeric powder
  • 100 ml unsweetened soy milk
  • 150 g breadcrumbs
Other
  • 130 g vegan cheese diced
  • oil for coating the croquettes

Method
 

Potato dough
  1. Peel the potatoes and cut them into small pieces.
  2. Place the potatoes in a pot with 1 l of cold water and bring to a boil.
  3. Once boiling, reduce the heat and cook for approximately 20 minutes, or until the potatoes are tender.
  4. Drain the cooked potatoes, mash them, and let them cool.
  5. Add all the seasonings (salt, parsley, garlic powder, nutmeg, pepper) and the olive oil, then mix well.
Breading
  1. Prepare two bowls for the breading process.
  2. In one bowl, combine the flour, turmeric, and soy milk; mix well until smooth.
  3. Place the breadcrumbs in the second bowl.
Preparing the croquettes
  1. Take a spoonful of the potato mixture and gently flatten it with your hands.
  2. Place a piece of cheese in the center, seal it with your hands, and shape it into a log.
  3. Dip the log into a mixture of flour, milk, and turmeric, then roll it in breadcrumbs.
  4. Arrange the croquettes on a baking sheet lined with parchment paper.
  5. Brush the croquettes with olive oil.
  6. Bake for 20 minutes in an oven preheated to 200°C.
  7. Let them cool slightly for a few minutes, then serve and enjoy!
