Method
Potato dough
- Peel the potatoes and cut them into small pieces.
- Place the potatoes in a pot with 1 l of cold water and bring to a boil.
- Once boiling, reduce the heat and cook for approximately 20 minutes, or until the potatoes are tender.
- Drain the cooked potatoes, mash them, and let them cool.
- Add all the seasonings (salt, parsley, garlic powder, nutmeg, pepper) and the olive oil, then mix well.
Breading
- Prepare two bowls for the breading process.
- In one bowl, combine the flour, turmeric, and soy milk; mix well until smooth.
- Place the breadcrumbs in the second bowl.
Preparing the croquettes
- Take a spoonful of the potato mixture and gently flatten it with your hands.
- Place a piece of cheese in the center, seal it with your hands, and shape it into a log.
- Dip the log into a mixture of flour, milk, and turmeric, then roll it in breadcrumbs.
- Arrange the croquettes on a baking sheet lined with parchment paper.
- Brush the croquettes with olive oil.
- Bake for 20 minutes in an oven preheated to 200°C.
- Let them cool slightly for a few minutes, then serve and enjoy!
