Are you ready for something different, packed with flavour and easy to prepare? Vegan Pad Thai with tofu is the perfect choice for anyone who loves Asian cuisine or simply wants to enjoy a delicious, nutritious and colourful meal at home.

This version of the popular Thai dish combines rice noodles, crispy stir-fried vegetables, golden pan-fried tofu and a delicious sauce made with soy sauce and peanut butter. The result is a wonderful blend of sweet and savoury flavours, creamy textures and freshness that will delight you from the very first bite. The tofu gets beautifully golden during cooking and absorbs the flavour of the sauce, while the vegetables add colour, a variety of textures and extra freshness to the dish.
You don’t need any complicated ingredients to make vegan Pad Thai. All you need is:
- onion,
- garlic,
- tofu,
- oil,
- cooked corn,
- carrot,
- green beans,
- soy sauce,
- peanut butter, and
- rice noodles.
For decoration and the perfect finishing touch, sprinkle some chopped peanuts over your Pad Thai and squeeze a little lime juice on top.

How to Make Vegan Pad Thai with Tofu
The preparation is simple and perfect for days when you don’t have much time to spend cooking.
Heat some oil in a pan and sauté the onion and garlic. Then add the diced tofu and all the vegetables. Cook until the vegetables have softened but still retain a little crunch. Meanwhile, prepare the sauce by blending peanut butter, soy sauce and water until smooth. Place the rice noodles in a pot, pour boiling water over them and let them soak for 2–3 minutes, until softened.
Pour the sauce over the sautéed vegetables, add the rice noodles and mix everything well. Cook for a few more minutes until all the ingredients are nicely combined. Serve and, if desired, garnish with chopped peanuts and a squeeze of fresh lime juice.
