The ultimate autumn dessert, which has two autumn classics as main ingredients – chestnuts and pumpkin.
Autumn is a time when nature gifts us with an abundance of pumpkins, apples, grapes, as well as chestnuts, so this is the perfect time to go to the forest and fill up a basket with these wonderful nuts and start preparing delicious dishes with this healthy ingredient! This delicious dessert in a jar is a true personification of autumn, as it combines chestnut, pumpkin and autumn spices.
This dessert is a real vitamin bomb, which doesn’t contain any sugar, oil and gluten. It’s also extremely quickly prepared, as it doesn’t require any baking, you only need a blender and a little bit of cooking, and the result is this wonderful dessert in a jar.
Layers
This dessert consists of 3 exceptional layers that are very autumnal in colours and flavours and perfectly complete each other and create an amazing and delicious dessert when combined. All layers are very easy to prepare, as they don’t contain huge amount of ingredients, only one main ingredients and a few additional that bring out a truly exceptional taste of each of the layers.
The layers are:
- smooth chestnut cream – if you adore chestnuts, we guarantee you that this layer will really impress you! All you have to do is add almond milk, a little bit of maple syrup and vanilla extract to the cooked and peeled chestnuts, blend all together and you’ll get an extremely smooth and very creamy mousse.
- juicy and soft pumpkin cream – the main ingredient of this cream is of course hokkaido pumpkin, which is naturally quite sweet, so it’s ideal for desserts and with the addition of pumpkin spices, maple syrup, almond milk and vanilla extract it gets a heavenly taste and texture.
- delicious jam – a little jam between the two layers adds a wonderful fruity taste and some sweetness and connects both layers into delicious and beautiful dessert. Apricot or peach jam work best with this creams in our opinion.
Each layer on its own is extremely delicious, but if you capture them all together with a spoon, you will get a perfect harmony of flavours. If you want, you can also make just one of the creams, put it in a glass and you have a delicious dessert.

Chestnut mousse with sweet pumpkin cream
Equipment

Ingredients
Chestnut mousse
- 170 g boiled and peeled chestnuts
- 80 ml plant based milk we used sugar free almond milk
- 10 g maple syrup
- 1 teaspoon vanilla extract
Jam
- 4 tablespoons peach or apricot jam
Pumpkin cream
- 320 g cooked hokkaido pumpkin
- 20 ml plant based milk sugar-free almond milk
- 10 g maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin spices
Instructions
Chestnut mousse
- First, prepare the chestnut mousse by mixing peeled chestnuts, almond milk, maple syrup and vanilla extract in a blender into a smooth cream.
Pumpkin cream
- Cut the pumpkin into small cubes and cook until soft. Then let it cool down for a bit.
- Once it's cooled down, add almond milk, maple syrup, vanilla extract and spices and blend into a smooth cream.
Assembling a glass
- Carefully arrange the chestnut mousse on the bottom of the jars.
- Put a thick layer of jam on top of chestnut cream.
- Add pumpkin cream on top of the jam.
- Sprinkle some cinnamon on top and enjoy!
