Wild garlic pesto pasta is an extremely healthy and simple dish that is just perfect for the spring.
Nature has finally woken up and delighted us with plenty of sunshine, more pleasant temperatures, flowers and edible plants. In the spring, we are especially excited about the dandelion and wild garlic, which grow in abundance in our area. We leave the gathering to our father, who enjoys it, and we take over the preparation and creation of delicious and healthy dishes with it. We do not exaggerate if we say that we eat dandelion and wild garlic salad with warm potatoes, vinegar and olive oil every day during this period. Wild garlic is an excellent substitute for garlic in salads, as it has a very similar taste. However, it can also be used in a huge variety of dishes. It can be used to make soup, ravioli, sauces, as an addition to hummus, bread dumplings or to make wild garlic pesto. It is an extremely healthy plant, it cleanses the body, improves digestion, is a natural antibiotic, regulates blood pressure, lowers cholesterol, so it is good to add it to your meals and make them even healthier.
This time we have prepared wild garlic pesto, which is very easy and quickly made, perfect for when you don’t have a lot of time, but still want to eat a healthy and whole meal. All you need to prepare it are 5 ingredients and a mixer or blender. Pesto is generally prepared with oil and a lot of salt, but this is only necessary if you want to keep it in a jar for a long time. If used immediately (as in this recipe), the oil can be omitted and the salt added just to taste. Pesto goes well with pasta, we made spaghetti this time, but you can use your favorite pasta or gnocchi. The pesto can also be used as a spread on bread, toast or crackers.
Ingredients and procedure
You only need 5 ingredients to make wild garlic pesto:
- wild garlic,
- nutritional yeast,
- pine nuts,
- salt and
- blackpepper.
You just throw all of the ingredients into the blender, mix them well, add into cooked pasta, and cook together for another 5 to 10 minutes for garlic to cook and soften a bit. You can sprinkle roasted pine nuts on top.

Wild garlic pesto
Ingredients
- 150 g wild garlic
- 10 g nutritional yeast
- 20 g pine nuts
- 1/2 teaspoon salt
- a pinch of black pepper
Instructions
- Put all of the ingredients in a blender and mix.
- Stir the mixture gently into cooked pasta and cook for another 5 to 10 minutes.
- Serve and sprinkle with roasted pine nuts and grated vegan cheese.
