Vegan plum galette

Have you ever heard of galette? It is an extremely simple French version of pie, which consists of a brittle dough and delicious fruit filling, and is prepared without a pie baking dish. Plum galette is a delicious autumn dessert that will impress you with its wonderful taste and appearance.

Galette is easier to make than pie, because you don’t even need a pie pan! All you have to do is roll out the dough in a circle, add the filling in the middle and fold the dough over the filling. This way you get a gorgeous, slightly rough and imperfect look that gives the galette its charm! Unlike pie, galette is not covered with dough on top, which creates an interesting and attractive look.

This dessert is made with delicious crispy dough and juicy plum filling, which creates the perfect autumn dessert that will delight just about anyone who tries it. The preparation is very simple, so you can make this extremely tasty and beautiful plum galette very quickly. If you are not a fan of plums, you can also use other fruits for the filling, such as strawberries, blueberries, peaches, apples, etc.

Ingredients

This juicy and delicious galette is made with simple ingredients that you almost certainly already have at home. For crust you need:

  • spelt flour,
  • coconut sugar,
  • margarine,
  • vegan yoghurt and
  • water.

For a juicy plum filling, all you need is:

  • plums,
  • coconut sugar,
  • cinnamon,
  • lemon and
  • cornstarch.

Instructions

The preparation of crust and filling is really simple, you just mix and knead the ingredients for the dough and let it rest in the fridge for at least half an hour. For the plum filling, remove pits from plums, slice them and add coconut sugar, cinnamon, lemon juice and cornstarch and mix. Then comes the most fun part: designing the galette, which is way easier than you might think. If you’re feeling creative you can arrange plums in a circle to get a very pretty look, but if you just want to make galette as quick as you can, you can simply just put filling in the middle, fold the crust and bake it.

Apple galetta

This time of the year that there are so many apples you can also try to make apple galetta. Apple fillling is made with:

  • 100 g rhubarb,
  • 300 g apples,
  • 1/2 tsp cinnamon,
  • 30 g coconut sugar,
  • juice of half a lemon,
  • 5 g corn starch

Vegan plum galette

Servings 8 slices

Ingredients
  

Crust

  • 250 g spelt flour
  • 20 g coconut sugar
  • 50 g room temperature margarine
  • 60 g vegan yoghurt
  • 40 ml water

Plum filling

  • 450 g plums
  • 30 g coconut sugar
  • 1 teaspoon cinnamon
  • juice of half a lemon
  • 5 g corn starch

Coating

  • 10 g maple syrup

Instructions
 

Crust

  • Put flour, coconut sugar, margarine, vegan yoghurt and water in a bowl and mix well.
  • Cover the dough and let it rest in the fridge for at least half an hour.

Plum filling

  • Cut plums into thin slices and place them in a bowl.
  • Add coconut sugar, cinnamon, lemon juice and cornstarch and mix.

Galette

  • Roll out the cooled dough on baking paper into a circle with a diameter of 30 cm.
  • Arrange the filling in the middle of the dough, a little from the edge and fold the edges over the filling. Coat the dough with maple syrup.
  • Bake for 20 minutes at 180 °C.
  • Once baked, sprinkle with erythritol or powdered sugar if desired.
