Vegan orange-almond pie

If you love oranges, you have to try this delicious pie with crunchy almond filling!

Divine pie with a juicy and crunchy orange-almond filling is one of our favourite desserts this part of the year. Oranges are just the perfect autumn-winter fruit, full of vitamins that strengthen the immune system in cold days. The sweet orange juice and orange peel in the filling create an excellent orange flavour and flood the whole apartment with a wonderful aroma while baking, making the pie juicy and giving it a nice sweet taste, which is even more amazing in combination with chopped almonds. Melted dark chocolate on top ads a nice touch and goes so well with oranges.

This pie is a real treat that is also pretty filling, as it contains many almonds, which are very nutritious and healthy, they contain a huge amount of vitamin E, B2, magnesium and many other vitamins and minerals.

Dough

Homemade shortcrust pastry is very tasty and so easy to prepare. All you need is:

  • flour,
  • baking powder,
  • coconut sugar,
  • vanilla extract,
  • cold water,
  • coconut oil and
  • soy yogurt.

Prepare the dough by first mixing the dry ingredients (flour, baking powder and coconut sugar), add the remaining wet ingredients and knead everything well so that you get a nice homogeneous dough, put in the fridge for at least half an hour so it gets a bit harder and it’s easier to roll out later.

Filling

The filling is quite unusual for pies as it is crunchy, which is what makes it so exceptional and special. The filling is full of flavor, as it contains:

  • a lot of orange juice,
  • orange peel,
  • almonds and
  • a little bit of rum in
  • coconut sugar,

which create the perfect flavour when combined. The combination of almonds and oranges is simply divine and will surely impress you too. To prepare it, first chop the almonds with a knife, add fresh juice of two oranges, rum, coconut sugar and orange peel of two oranges (you can use the store bought organic peel or grate it yourself, but in this case be careful to use organic oranges).

Ingredients
  

Dough

  • 200 g flour
  • 1 teaspoon baking powder
  • 50 g coconut sugar
  • 1 teaspoon vanilla extract
  • 75 ml cold water
  • 50 g coconut oil melted, not hot
  • 1 tablespoon soy yogurt

Stuffing

  • 140 g whole almonds
  • 50 g coconut sugar
  • 2 oranges
  • 1 tablespoon rum
  • 2 tablespoons orange peel

Instructions
 

Dough

  • Mix flour, baking powder and coconut sugar.
  • Add vanilla flavoring, cold water, melted coconut oil and yogurt.
  • Mix well and knead, then cover and refrigerate for at least half an hour.

Filling

  • Chop the almonds into smaller pieces with a knife.
  • Squeeze the juice from the oranges and add it to chopped almonds.
  • Add orange peel, coconut sugar and rum and mix well together.

Pie

  • Take the dough out of the fridge, roll it out and put it in the baking pan and make an edge.
  • Spread the filling evenly on the dough.
  • Bake for 45 minutes in a preheated oven at 180°C.
