Vegan orange-almond pie

Juicy aromatic pie with crispy almond filling.
Dough
- 200 g flour
- 1 teaspoon baking powder
- 50 g coconut sugar
- 1 teaspoon vanilla extract
- 75 ml cold water
- 50 g coconut oil melted, not hot
- 1 tablespoon soy yogurt
Stuffing
- 140 g whole almonds
- 50 g coconut sugar
- 2 oranges
- 1 tablespoon rum
- 2 tablespoons orange peel
Dough
Mix flour, baking powder and coconut sugar.
Add vanilla flavoring, cold water, melted coconut oil and yogurt.
Mix well and knead, then cover and refrigerate for at least half an hour.
Filling
Chop the almonds into smaller pieces with a knife.
Squeeze the juice from the oranges and add it to chopped almonds.
Add orange peel, coconut sugar and rum and mix well together.
Pie
Take the dough out of the fridge, roll it out and put it in the baking pan and make an edge.
Spread the filling evenly on the dough.
Bake for 45 minutes in a preheated oven at 180°C.
