Vegan plum galette

Delicious crispy dough and juicy plum filling.
Crust
- 250 g spelt flour
- 20 g coconut sugar
- 50 g room temperature margarine
- 60 g vegan yoghurt
- 40 ml water
Plum filling
- 450 g plums
- 30 g coconut sugar
- 1 teaspoon cinnamon
- juice of half a lemon
- 5 g corn starch
Crust
Put flour, coconut sugar, margarine, vegan yoghurt and water in a bowl and mix well.
Cover the dough and let it rest in the fridge for at least half an hour.
Plum filling
Cut plums into thin slices and place them in a bowl.
Add coconut sugar, cinnamon, lemon juice and cornstarch and mix.
Galette
Roll out the cooled dough on baking paper into a circle with a diameter of 30 cm.
Arrange the filling in the middle of the dough, a little from the edge and fold the edges over the filling. Coat the dough with maple syrup.
Bake for 20 minutes at 180 °C.
Once baked, sprinkle with erythritol or powdered sugar if desired.
