Colourful salad with cashew dressing

You won’t be able to resist these beautiful vivid colours, which invite you to try it. And the taste is just as exceptional. Salad bowl contains lots of vegetables, walnuts and delicious and healthy home-made cashew dressing. Salad is also gluten-free and oil-free.

We love simple and quick meals that are also very healthy and delicious at the same time. This salad is a perfect choice for when we want to enjoy a light and healthy dish or don’t have time to cook for hours and hours, as the ingredients are just sliced ​​and put in a bowl and topped with a dressing that is prepared in just a few minutes. It is also great to take on the go or as a healthy lunch at work or school, as you can simply place it in a container or glass jar and add dressing before eating.


Salad contains only healthy ingredients that go really well together:

  • cabbage,
  • lettuce,
  • cherry tomatoes,
  • red beans,
  • onion,
  • microgreens,
  • walnuts and
  • home-made dressing.

It is a very light but filling dish, because it contains walnuts and beans, which are a rich source of protein and cashew nuts, which represent a source of healthy fats. Cabbage and walnuts provide crunchiness, while tomatoes, beans and dressing provide the juiciness of the salad. Dressing is very simple and quick to make, but adds an exceptional flavour to the salad! It is made with cashews, nutritional yeast, cayenne pepper, salt and black pepper. We use store bought cashew butter, which is very creamy, but you can also make it at home by blending pre-soaked cashews into a smooth cream.

You can eat salad as a main dish, as it contains ingredients that will satiate you well, or you can eat it as a side dish and adjust the amount of salad.


Colourfull salad with cashew dressing

A delicious and colorful salad full of vitamins, minerals, protein and healthy fats is a great lunch.
Servings 2 people


  • 70 g lettuce
  • 200 g cabbage
  • 130 g cherry tomatoes
  • 120 g cooked red beans
  • 1 small red onion
  • 25 g walnuts
  • a handful microgreens


  • 20 g cashew butter
  • 30 ml water
  • 5 g nutritional yeast
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • a pinch of pepper



  • Put green salad in a bowl.
  • Cut the cabbage into strips and add it to the bowl.
  • Add halved cherry tomatoes, beans, walnuts, sliced onion and microgreens.


  • Mix all of the ingredients in a bowl to get a liquid dressing.
  • If you want the dressing to be more liquid just add a little more water. If you want it to be thicker add a bit more nutritional yeast.
  • Pour dressing over the salad and mix well to distribute evenly throughout the salad.
