Vegan mushroom and spinach quiche
Ingredients
Crust
- 340 g spelt flour
- 1 tsp salt
- 50 g margarine
- 130 ml water
Filling
- 100 g vegan egg substitute
- 400 ml water
- 200 g oat cooking cream
- 80 g spinach
- 120 g mushrooms
- 5 g garlic powder
- 5 g dried mushrooms
- 5 g salt
- Pinch of pepper
Instructions
Crust
- Mix the flour and salt in a bowl.
- Add margarine and water, then knead into a smooth dough.
- Roll the dough into a circle and place it in a 25 cm quiche pan.
- Pierce the bottom with a fork and pre-bake for 5 minutes at 180 °C.
Filling
- Prepare the filling by mixing all ingredients (except spinach and mushrooms) into a smooth cream.
- Stir in the spinach and chopped mushrooms.
Quiche
- Pour the filling onto the pre-baked crust and spread evenly.
- Bake for 30 minutes in a preheated oven at 180-200 °C.
