Vegan vegatable quiche

Vegan quiche with fresh veggies is the perfect spring dish that will impress you with its incredible appearance and taste!

Vegetable quiche is a great way to incorporate more vegetables into your diet. You can use different kinds of vegetables and create a very colourful dish that just screams spring! We used asparagus, cherry tomatoes, onions and mushrooms. The recipe is very easy to prepare, and you can use different vegetables and spices and adjust the recipe to your own taste.

The combination of crunchy crust and rich and creamy filling is just the best! Quiche is a delicious, nutritious and satiating dish that can be served as a main dish for lunch or dinner or as a side dish to other vegan dishes.

Ingredients and process

Quiche is extremely easy to make, completely from scratch! The crust is made with spelt flour and the main ingredient of a creamy filling is tofu, with added vegetables and spices to create the perfect flavour. This is a versatile and delicious dish that everyone can enjoy.

The crust is made from:

  • spelt flour,
  • salts,
  • margarine and
  • water.

The filling contains:

  • soya cuisine cream,
  • tofu,
  • nutritional yeast,
  • corn starch,
  • turmeric,
  • onion powder, garlic powder, dry parsley and
  • salt.

We added colorful vegetables to the filling: onions, mushrooms, tomatoes and asparagus, but you can add any vegetables you like. We coated the pie and the edges with a mixture of margarine, turmeric and soy sauce to make a nice crispy crust.

Vegan vegetable quiche

Delicious dish consisting of crunchy crust and rich and creamy filling.
Servings 8 slices



  • 400 g spelt flour
  • 1 teaspoon salt
  • 65 g margarine
  • 165 ml water


  • 200 g soya cuisine cream
  • 200 g tofu
  • 20 g nutritional yeast
  • 25 g corn starch
  • a pinch of turmeric
  • 5 g onion powder
  • 5 g garlic powder
  • 5 g dry parsley
  • 5 g salt


  • 300 g asparagus
  • 120 g cherry tomatoes
  • 140 g mushrooms
  • 1 onion


  • 1 teaspoon margarine
  • 1 teaspoon soy sauce
  • a pinch of turmeric



  • Put the flour and salt in a bowl and mix. Add margarine and water and mix and knead until you get a uniform mass, which you put in the refrigerator to rest for half an hour.


  • Meanwhile, prepare the filling, put all the ingredients (except the vegetables) in a blender and blend into a smooth cream.


  • Roll out the chilled pie dough into a circle and place in a 30 cm diameter pie pan.
  • Then pour the filling on the dough, spread the chopped vegetables over the filling and fold the edges of the dough over the filling to get a nice edge.
  • Coat the edges and vegetables with a mixture of margarine, soy sauce and turmeric until they are browned nicely.
  • Bake for 40 minutes in a preheated oven at 200 °C.
