Blue Mexican tortillas

Tortillas are the base of many Mexican dishes, such as taco, burrito, quesadilla and many other delicious dishes. Many may think that making tortillas is complicated, but it is really simple, we only need 3 ingredients and a good half hour. Homemade tortillas are tastier and healthier than store-bought ones! This time we prepared very special, Mexican blue tortillas!

Homemade tortillas are definitely better than store bought ones. They are fresh, free from preservatives and other artificial additives often found in commercial tortillas. Plus, you have complete control over the ingredients – all you need is corn flour, water and a little salt. You can easily adapt them to your preferences, whether in terms of thickness, size or taste.

To prepare the tortillas, we used blue corn flour, which is obtained from blue corn, so the color is completely natural. We rolled them out using a tortilla press, which makes the job a lot easier.

These tortillas are also gluten-free, so they are perfect for those following a gluten-free diet. In addition, they are tastier and more aromatic than store-bought tortillas. Homemade corn tortillas will brighten up your daily menu. You can use them for tacos, burritos, enchiladas, or simply serve them with your favorite salsa or guacamole.

Using a tortilla press

A tortilla press is a device used to evenly roll out dough for tortillas. A press usually consists of two plates (usually metal or wooden) connected by a system of handles that allow the dough between the plates to be compressed and expanded into a thin round shape.

How it works:

  1. A piece of dough, usually corn flour (for corn tortillas) or wheat flour (for wheat tortillas), is placed on the bottom plate of the press.
  2. By pressing on the handle, push the top plate down, thereby evenly compressing and shaping the dough into a thin, flat tortilla.
  3. When the tortilla is ready, remove it from the press and you can immediately bake it on a hot pan.

Tortilla presses are very useful, as they allow quick and easy preparation of tortillas without the need to roll the dough by hand. Blue Mexican tortilla

Ingredients
  

  • 180 g (1½ cup) corn flour
  • 230 ml (1 cup) water
  • 1 teaspoon salt

Instructions
 

  • Mix corn flour, salt and water in a bowl. Mix well and knead into a dough. Knead the dough for 2-3 minutes until it becomes smooth and elastic. If the dough is too sticky, add a little flour, if it is too hard, add a little more water. Cover the dough with a kitchen towel and let it rest for 15 minutes. This will allow the ingredients to combine well and the tortillas will be softer.
  • Divide the dough into smaller balls. The balls should be about the same size.
  • We made tortillas with tortilla press. It works by having two plates (top and bottom) between which you press the dough. Before you start, place some baking paper or plastic bags on the bottom, add dough and put another paper on the top of the dough to prevent the dough from sticking to the press.
  • Close the press and press the handle. Most presses have a handle that allows easy and even pressing of the dough. Hold down for a few seconds to spread the dough evenly and form it into a thin tortilla.
  • After you have pressed the tortilla, carefully remove the top paper, grasp the bottom paper and use it to transfer the tortilla to the pan, then carefully remove the paper. You will repeat this for the remaining balls of dough.
  • Prepare the tortillas in a hot pan without oil, at a medium temperature. When the pan is well heated, place the tortilla in the center and cook for 1-2 minutes on one side until bubbles begin to appear. Then turn it over and cook for another 1-2 minutes on the other side, until it becomes slightly golden brown.
  • Once the tortillas are baked, place them on a plate and cover with a damp cloth to keep them warm and soft. This will prevent them from drying out. Tortillas are ready to use in a variety of dishes such as tacos, burritos, quesadillas and the like.
