Vegan speculaas pie

Enjoy the holidays with a wonderful pie made from speculaas cookies and refreshing tofu filling.

This year, we started holiday baking really early, because we have a lot ideas for desserts. This delicious pie is made from speculaas cookies and a vegan “curd” filling, which tastes very much like a classic cheesecake. So all cheesecake lovers will definitely be delighted with this pie. For the dough, we only used cookies in margarine, and the filling contains tofu, soy yogurt, vanilla, coconut sugar and cornstarch, which ensures that the filling hardens just right during baking. Tofu is great in recipes where cottage cheese is usually used, as it has a very similar crumbled texture, but when you add the other ingredients to it, it doesn’t taste like tofu anymore, but it gives a great texture. The combination of rich flavors creates a truly wonderful dessert.

Ingredients and instructions

This delicious and juicy pie is made with only 8 simple ingredients.

These are:

  • speculatius cookies,
  • margarine,
  • soy yogurt,
  • lemon juice,
  • maple syrup– you can also use agave or rice syrup,
  • vanilla extract,
  • tofu– we used regular tofu (not silken) and
  • corn starch.

Put cookies in an electric mixer and blend them or grind them very finely. Add room temperature margarine and mix. Grease a pie pan (diameter 18 cm) with margarine and pour the cookie mixture on it and shape the bottom and edge of the pie by pressing well with your hands so that it sticks together. Put all the ingredients for the cream in a blender and blend them into a smooth mixture. Pour the cream onto the dough and bake for 30 minutes in a preheated oven at 190 °C. Let the pie cool, then take it out of the pan and decorate as desired.

  • 50 g of maple syrup
  • 1 teaspoon of vanilla extract
  • 25 g of corn starch
  • 15 ml of lemon juice
  • 150 g of soy yogurt

Instructions
