Vegan speculaas pie

Delicious, simple and festive vegan pie
DOUGH
- 300 g speculaas cookies
- 100 g of margarine
FILLING
- 200 g of tofu
- 50 g of maple syrup
- 1 teaspoon of vanilla extract
- 25 g of corn starch
- 15 ml of lemon juice
- 150 g of soy yogurt
DOUGH
Put cookies in an electric mixer and blend them or grind them very finely.
Add room temperature margarine and mix.
Grease a pie pan (diameter 18 cm) with margarine and pour the cookie mixture on it and shape the bottom and edge of the pie by pressing well with your hands so that it sticks together.
FILLING
Put all the ingredients for the cream in a blender and blend them into a smooth mixture.
Pour the cream onto the dough and bake for 30 minutes in a preheated oven at 190 °C.
Let the pie cool, then take it out of the pan and decorate as desired.
