If you’re a fan of chocolate and looking for a delicious vegan treat, you might want to try making vegan rice chocolate bars made from just 2 ingredients! These bars are a perfect combination of crispy rice cereal and rich chocolate, making for a satisfying snack that’s easy to make and perfect for any occasion.
We used to really love rice chocolate when we were kids so we simply had to make it ourselves and in a vegan version! Rice chocolate is also a great way to use up chocolate leftover from the holidays, we used chocolate bunnies and chocolate eggs left over from Easter.
These vegan rice chocolate bars are not only delicious, but they’re also a healthier alternative to traditional chocolate bars. They’re gluten-free and don’t contain any animal products, making them suitable for vegans and those with dietary restrictions. And you can even make them sugar free by using sugar free chocolate!
To prepare this delicious and crunchy snack, you only need 2 ingredients: chocolate and rice waffles or puffed rice. We made rice chocolate for the first time and certainly not the last, because it is really delicious and extremely easy to prepare. All you have to do is mix crushed rice cakes with melted chocolate and then let it harden! You can cut the chocolate into rectangles or squares, or you can also crumble it and use it as a topping for your yogurt and smoothie bowls. The two of us cut it into squares, and we put the small pieces that broke off in a glass jar to use as a topping on smoothie bowls. You can also customize this recipe to your liking by adding nuts, dried fruit, or other ingredients to the mix. Some popular variations include peanut butter and chocolate, coconut and chocolate, or even matcha and white chocolate.
Ingredients and preparation
You only need 2 simple ingredients to prepare this crunchy and delicious snack:
- vegan chocolate– you can use any chocolate (dark, milk substitute, white…) and
- rice waffles.
Start by melting the chocolate over steam. Crush the rice waffles into a large bowl with your hands, pour melted chocolate over it and mix well. Put the mixture in the middle of the baking paper and shape it into a rectangle about 2 cm high and fold the baking paper over mass to close it. Put in the fridge and let it harden completely. Then cut into approximately 12 pieces with a sharp knife.
Vegan rice chocolate bars
- 200 g vegan chocolate
- 10 rice waffles
- Melt the chocolate over steam.
- Crumble rice waffles into a large bowl with your hands.
- Pour the melted chocolate over crumbled waffles and mix well.
- Put the mixture in the middle of the baking paper and shape it into a rectangle about 2 cm high and fold the baking paper over the mixture so that it is closed.
- Place in the refrigerator and let it harden completely.
- Then cut into about 12 pieces with a sharp knife.
