Gluten-free zucchini patties are a delicious and healthy summer dish!
This time of the year, when there are plenty of zucchini in the garden and in stores, we prepare them almost every day, because they are very healthy, tasty and versatile. These zucchini patties are gluten-free and a great way to prepare zucchini. You can enjoy them as a side dish or as a main dish with some dipping sauce (hummus, vegan tartar sauce, ketchup …) and a large bowl of salad. This is a great choice on these hot summer days, because it is light, refreshing and full of vitamins and minerals. For an extra dose of vitamins, we added micro greens, which are very nutritious.
Ingredients and procedure
These patties are also great for those who enjoy a gluten-free diet, because they contain chickpea and corn flour, which are naturally gluten-free. The preparation of patties is very easy and they are made with only 9 healthy ingredients:
- zucchini,
- garlic
- corn flour,
- chickpea flour,
- flax seeds,
- salt,
- dried parsley,
- black pepper and
- garlic powder.
Make them by first peeling the zucchini and garlic and finely grating it. Add all of the other ingredients, mix and let rest for about 10 minutes. Heat a little bit of olive oil in a frying pan. Scoop tablespoons of batter for each patty, flatten it with a spoon and fry on each side for about 2 minutes.

Zucchini patties
Ingredients
- 300 g zucchini
- 4 cloves garlic
- 1 teaspoon salt
- 1 teaspoon dried parsley
- 50 g corn flour
- 10 g flax seeds
- 40 g chickpea flour
- a pinch of pepper
- 1 teaspoon garlic powder
Instructions
- Peel zucchini and garlic and finely grate it.
- Add all of the other ingredients, mix well and let it rest for 10 minutes.
- Heat a little bit of olive oil in a frying pan. Scoop tablespoons of batter for each patty, flatten it with a spoon and fry on each side for about 2 to 3 minutes.
