Zucchini patties

Healthy, easy and delicious gluten-free summer zucchini patties

Ingredients
  

  • 300 g zucchini
  • 4 cloves garlic
  • 1 teaspoon salt
  • 1 teaspoon dried parsley
  • 50 g corn flour
  • 10 g flax seeds
  • 40 g chickpea flour
  • a pinch of pepper
  • 1 teaspoon garlic powder

Instructions
 

  • Peel zucchini and garlic and finely grate it.
  • Add all of the other ingredients, mix well and let it rest for 10 minutes.
  • Heat a little bit of olive oil in a frying pan. Scoop tablespoons of batter for each patty, flatten it with a spoon and fry on each side for about 2 to 3 minutes.
