Vegan chestnut ravioli

If you don’t know how to use chestnuts in another way than for cooking and baking, we have a great idea for you! Delicious autumn ravioli with chestnut filling in a creamy pumpkin sauce.

Autumn is here, and with it a huge amount of chestnuts, which we use for cooking, baking and creating delicious savory and sweet recipes. This time we made delicious ravioli with chestnut filling, which are so easy to prepare. If you don’t know how to use chestnuts, or if you are already tired of the same recipes, these ravioli are a great idea. The filling is extremely creamy and rich in taste and will surely impress you, and they go especially well in combination with a delicious creamy pumpkin sauce.

We like to make ravioli ourselves, because they are easy to prepare and the dough is made from only 3 ingredients! We experiment with fillings and create new flavors every time. Chestnut is an excellent ingredient for filling, as it is very creamy and rich in taste, and when we add a few more ingredients, we get a truly divine filling with which we fill ravioli. Ingredients and instructions

You only need 7 simple ingredients to make these delicious chestnut ravioli:

  • flour,
  • water,
  • salt,
  • chestnut,
  • garlic powder,
  • black pepper and
  • vegan cooking cream.

Put flour in a bowl and mix it with salt. Add water and knead into a dough. Put dough in the fridge for at least half an hour. Mash chestnuts, add salt, garlic and black pepper and mix. Add vegan cream and mix, then blend with a stick blender. Divide the cooled dough into two parts and roll into a square. Make piles of chestnut filling on one part. Cover the parts of the dough between the piles with water, then take another dough and cover it. Use your hands to press the parts of the dough well between the filling. Use a rolling pin or a knife to cut the dough between the filling so that you get 20 ravioli. Boil water in a large pot, throw the ravioli into the boiling water and cook until they float to the surface (3-5 minutes).

  • pinch of salt

Filling

  • 140 g chestnuts boiled and peeled
  • half a teaspoon of salt
  • 1 teaspoon garlic powder
  • a pinch of black pepper
  • 60 g vegan cooking cream

Instructions

  • Put flour in a bowl and mix it with salt. Add water and knead into a dough.
  • Put dough in the fridge for at least half an hour.

Filling

  • Add vegan cream and mix, then blend with a stick blender.

Ravioli

  • Divide the chilled dough into two parts and roll into a square.
  • Make piles of chestnut filling on one part of the dough.
  • Cover the parts of the dough between the piles with water, then take another dough and cover it.
  • Use your hands to press the parts of the dough well between the filling.
  • Use a rolling pin or a knife to cut the dough between the filling so that you get 20 ravioli.
  • Boil water in a large pot, throw the ravioli into the boiling water and cook until they float to the surface (3-5 minutes).
  • Serve with sauce.
