Vegan caramel cheesecake bars

Delicious three layered cheesecake bars will impress you with the perfect combination of flavours.

These delicious slices consist of three amazing layers:  crispy crust made with oats, tender cheesecake cream made with cashews and an exceptional caramel on top. Each of the layers is delicious on its own, but combined together they form a divine dessert that is impossible to resist! The preparation is very easy and does not take much time – you only need to bake crust, mix all of the ingredients for the cream in a blender, and cook caramel  in just a few minutes.

Bars are perfect for everybody who loves cheesecake, as the taste and texture are extremely similar, and the slices just melt in your mouth! Ingredients and procedure

You only need 8 different ingredients to prepare all three layers!

Crust

The main ingredient of crust is oat flour. You can buy it or simply blend regular oats into flour. The rest of the ingredients are canned coconut milk, maple syrup and a bit of natural vanilla extract .

Mix all of the ingredients together until you get a firm dough and roll it out thinly, the easiest way is to roll it out between two sheets of baking paper, and then bake it for 10 minutes at 180°C.

Cheesecake cream

Our favourite part is the cream which is made from cashew nuts, maple syrup, coconut oil and vanilla extract . Cashews are the perfect ingredient for the cream, because they became really soft after soaking in warm water for a few hours and they blend easily into a smooth cream. They are also extremely healthy and are an excellent source of antioxidants, they also contain a huge amount of protein, magnesium, potassium, iron, copper and vitamin K.

For the cream, simply mix all of the ingredients in a blender, but you can also use a stick blender.

Caramel

Caramel rounds up the whole dessert with a wonderful look and a pleasant sweet taste! Preparing vegan caramel is extremely easy and the taste is simply divine. All you need is canned coconut milk, date syrup, coconut sugar and salt .

Put all of the ingredients in a small pan, mix and bring to a boil. Let it boil for about 2 minutes and stir constantly, then reduce to medium temperature and cook for another 3 minutes, stirring several times in between. Pour it on top of cheesecake cream.

Caramel can also be used as a topping for ice cream or any other dessert, it goes well with many different dishes, including pancakes or waffles. It’s also possible to use it for vegan twix, which is extremely similar to the original!

Vegan caramel cheesecake bars

Ingredients
  

Base

  • 135 g oat flour
  • 100 g coconut milk canned
  • 20 g maple syrup
  • 1 tsp vanilla essence

Cheesecake cream

  • 120 g cashews
  • 15 g maple syrup
  • 20 g coconut oil
  • 1 tsp vanilla essence

Caramel

  • 100 g coconut milk canned
  • 15 g date syrup
  • 45 g coconut sugar
  • pinch of salt

Instructions
 

Base

  • Mix together oat flour, coconut milk, maple syrup and vanilla essence until you get a firm dough.
  • Put it on a baking paper, cover with another baking paper and roll out into a square (approximately 16x16 cm).
  • Put it in a pan covered with baking paper and bake for 10 minutes in a preheated oven at 180°C.

Cheesecake cream

  • Soak cashews in warm water for a couple of hours so they became soft and are easier to blend.
  • When they are ready just rinse them under the water and mix together with other ingredients (maple syrup, coconut oil and vanilla essence) into a smooth cream.
  • Spread it evenly on a prebaked base.

Caramel

  • Mix all of the ingredients (coconut milk, maple syrup, coconut sugar and salt) in a pan and bring them to a boil.
  • While it’s boiling keep mixing it for around 2 minutes and then lower the heat and mix for 3 more minutes.
  • Pour caramel on cream and let it cool down.
  • Cut into 9 squares and enjoy.
  • Store it in a fridge.
