This delicious sauce is so easy to make, that you’ll want to make it all the time!
Who doesn’t love pasta! There are so many kinds of pasta that you can’t get bored of it. These are called tortiglioni and we made them with vegan bolognese. You’ll love this recipe, because it’s so easy to make and tastes heavenly. This recipe is a family lunch staple! It’s rich, thick and full of flavour.
It’s made with just few simple ingredients:
- soy mince,
- tomato sauce,
- spices and
- onion.
Few basic ingredients and a little bit of time and you have a wonderful sauce. You can add different spices in it and some vegetables, and each time you have a different kind of sauce.
It goes great with pasta, polenta, gnocchi and also mashed potato. We like to add some vegetables in it, like chickpeas, sweet corn, zucchini, pumpkin or eggplant. You can add your favourite vegetables or just skip it.
This sauce is a game changer and you have to try it. You can also freeze it for later use, when you are in a hurry or just don’t feel like cooking.
We really love using soya mince in our dishes. It has a neutral taste so it absorbs flavours very well. It’s also a great source of protein.
Soya mince is really easy to prepare. It’s dry when you purchase it and has to be soaked to use it. We just pour some boiling water over it and leave it for 5 to 10 minutes to absorb the water. Then you can use it for bolognese sauce, vegan meat balls, in lasagna, salads.

Vegan bolognese
Ingredients
- 1 tbsp olive oil
- 1 onion
- 50 g soy mince
- 375 ml tomato sauce
- 150 g cooked chickpeas
- salt
- dry basil and oregano
Instructions
- Pour hot water over soy mince and leave it for about 5 to 10 minutes.
- Meanwhile heat a large pan, add oil and wait until it's hot. Add chopped onion and sauté
it for about 5 minutes. add soy mince (presoaked in hot water for a few minutes), tomato sauce and spices. - Reduce heat to medium and add presoaked soy mince into a pan. Sauté about 3-4 minutes.
- Add tomato sauce, salt, dry basil and oregano and mix it well together.
- Cook for another 5 to 10 minutes, then add chickpeas and serve.
