Tips for the perfect banana bread

  •  Use very ripe bananas! Overripe, almost black bananas are the sweetest and will provide a rich flavour without the need for a lot of extra sugar. They’re also soft and juicy which is perfect for making the best banana bread!
  • Add your own twist! You can add chopped dark chocolate, nuts for some crunchiness and if you want a more tropical touch, try adding coconut flakes, candied tropical fruits…
  • Store properly! Banana bread stays fresh for up to 3 days if stored in an airtight container at room temperature. You can also freeze it – cut it into slices and wrap them individually for a quick sweet snack later.

How to make the best banana bread?

  1. Warm up the oven: Preheat oven to 180°C and prepare a long baking sheet – line with parchment paper or lightly grease with oil.
  2. Mix wet ingredients: In a large bowl, mash bananas, add bourbon vanilla, almond milk (or plant-based milk of your choice), maple syrup, and hazelnut spread (optional) and mix well.
  3. Mix dry ingredients: In a bowl, mix flour, baking soda, and baking powder, add wet mixture, and mix. Add freeze-dried strawberries and chocolate, if desired, and mix lightly.
  4. Bake: Pour batter into prepared pan and bake for 30 minutes or until a toothpick inserted in the centre comes out clean.
  5. Cool down and enjoy: Wait at least 10 minutes, then slice and enjoy the perfect combination of soft inside and crispy crust!

Ingredients
  

  • 2 ripe bananas
  • 1 tablespoon bourbon vanilla paste
  • 260 ml almond milk
  • 30 g maple syrup
  • 1 teaspoon hazelnut butter (or any other kind of nut butter)
  • 300 g white or semi-white flour
  • 12 g baking powder
  • 8 g baking soda
  • 15 g freeze-dried strawberries
  • 50 g chocolate chips

Instructions
 

  • Mash 2 ripe bananas with a fork.
  • Add bourbon vanilla, almond milk, maple syrup and hazelnut spread and mix.
  • In another bowl, mix the dry ingredients (flour, baking powder, baking soda) and add the wet ingredients.
  • Mix well, add the freeze-dried strawberries and chocolate chips and mix lightly.
  • Pour into an oblong baking dish and bake for 30 minutes in a preheated oven at 180 °C.
  • When the cake is baked, remove it from the baking dish and let it cool.
  • Slice and enjoy the juicy and delicious cake.
