Chia jar with raspberries is a great idea for a healthy breakfast or even dessert, as it is pleasantly sweet, and raspberries and coconut make it very refreshing.
The jar consists of three delicious layers : cooked raspberries with maple syrup, coconut chia pudding and coconut yogurt with raspberries. The combination of coconut and raspberries creates a very refreshing taste that is perfect for sunny spring days. You only need 5 ingredients to prepare it, and the best thing about this pudding is that it will make you feel full, so it’s a great choice for breakfast as it gives you extra energy to start the day. It’s also gluten free, sugar free and oil free.
Chia pudding
Chia pudding is a perfect healthy alternative to classic pudding, as chia seeds contain a huge amount of omega-3 fatty acids, calcium, potassium, protein and fiber, which also helps with digestion. When we soak chia seeds in liquid, they increase greatly and therefore also create a feeling of satiety. Chia seeds themselves do not have a strong taste, so when preparing the pudding, we add coconut drink, coconut yogurt and maple syrup to give the pudding a wonderful coconut flavour. When chia seeds are soaked in liquid, they get a slimy membrane, so the texture is similar to pudding.
Ingredients and preparation
Preparing a chia jar is very easy and doesn’t take much time, and the taste is divine nonetheless! As mentioned, you only need 5 ingredients in total:
- raspberries,
- chia seeds,
- coconut drink,
- coconut yogurt &
- maple syrup.
Raspberries
First prepare the bottom layer: put fresh or frozen raspberries (previously thawed) together with maple syrup in a pot and bring to a boil, then mash with a fork and put half in each jar.
Chia pudding
Prepare the creamy chia pudding by mixing chia seeds, coconut drink and maple syrup in a bowl and letting it rest in the fridge for about an hour. Stir in between so that the chia seeds do not stick together and form lumps. Finally, add coconut yogurt to make the pudding even thicker and creamier. Then put pudding in a jar, on a layer of raspberries that you prepared earlier.
Coconut yogurt
For the last layer, just mix coconut yogurt with raspberries to make the yogurt turn a slightly pink and put it in a jar, on top of chia seeds. If desired, add some more raspberries for decoration and jars are ready.
You can eat them right away or leave in the fridge overnight.
