Ingredients and process
For these delicious autumn pancakes you need the following simple ingredients:
- apples,
- lemon,
- water,
- agave syrup,
- spelt flour,
- baking powder,
- cinnamon and
- plant based drink.
First, prepare the apples by cutting them into circles. We cut them by placing them upright and cutting so that we don’t go over the middle of the apple (as shown in the picture and in the video), this is how we avoid having to remove the core. Then peel the apple slices.
Add lemon juice, agave syrup and water to a pan and mix. Add the sliced apples, cover and bring to a boil. Cook for about 5 minutes until the apples soften. Put flour, baking powder and cinnamon in a bowl and mix. Add the herbal drink and mix into a smooth mixture.
Put half a teaspoon of coconut oil in a pancake pan and heat it. Dip each apple slice in the batter so that it is completely covered and place it immediately on the hot pan. Cook on one side for about 1 minute, then flip and cook for another 1 minute on the other side. Place the baked apples on a plate, one on top of the other, and top with maple syrup if desired.
