Roasted tomato with tofu
Ingredients
- 330 g 11.6 oz / about 4 tomatoes
- 1 onion
- 150 g 5.3 oz tofu
- 5 g 1 tsp olive oil
- 4 sprigs parsley
- 8 g 1 ½ tsp salt
- a pinch of black pepper
- ½ tsp turmeric
Instructions
- Peel the onion and slice it into thin strips. Heat the olive oil in a pan, add the onion, and sauté over medium heat for about 5 minutes, until softened and fragrant.
- Dice the tomatoes into small cubes and lightly drain them. Add to the pan with the onion and cook for about 5 to 10 minutes, until the tomatoes break down into a sauce.
- Crumble the tofu and add it to the pan together with the chopped parsley, salt, pepper, and turmeric. Stir well and cook for another 5 minutes, allowing the flavors to blend.
