Colourfull salad with cashew dressing

A delicious and colorful salad full of vitamins, minerals, protein and healthy fats is a great lunch.
- 70 g lettuce
- 200 g cabbage
- 130 g cherry tomatoes
- 120 g cooked red beans
- 1 small red onion
- 25 g walnuts
- a handful microgreens
Dressing
- 20 g cashew butter
- 30 ml water
- 5 g nutritional yeast
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon salt
- a pinch of pepper
Salad
Put green salad in a bowl.
Cut the cabbage into strips and add it to the bowl.
Add halved cherry tomatoes, beans, walnuts, sliced onion and microgreens.
Dressing
Mix all of the ingredients in a bowl to get a liquid dressing.
If you want the dressing to be more liquid just add a little more water. If you want it to be thicker add a bit more nutritional yeast.
Pour dressing over the salad and mix well to distribute evenly throughout the salad.
