Vegan zucchini lasagna

Very healthy and simple to make lasagna without lasagna sheets.
Servings 2 people

Ingredients
  

  • 1 medium zucchini

Filling

  • 1 tablespoon olive oil
  • 1 onion
  • 50 g minced soy meat
  • 250 ml tomato sauce
  • 1 cup chickpeas
  • salt
  • dry basil and oregano

Instructions
 

  • Cut zucchini into very thin layers.
  • Saute onion for a few minutes, then add soy meat (presoaked in hot water for a few minutes), tomato sauce and spices.
  • Cook for a few more minutes.
  • Put zucchini slices in a pan and cover it with sauce and then repeat making thin layers.
  • Bake for 30 minutes on 200°C.
