Vegan chocolate crepe roll
A delicious dessert that is extremely easy to prepare and does not contain eggs or milk!
Crepes
- 320 g flour (2cups)
- 20 g cocoa powder (1/4 cup)
- 530 ml plant-based drink (2 1/3 cup)
Cream
- 300 g vegan whipping cream (1 1/3 cup)
- 120 g of vegan mascarpone (2/3 cup)
- 1 teaspoon vanilla extract
- 40 g powdered sugar (1/4 cup)
- 1 tablespoon vegan Baileys liqueur optional
Topping
- 60 g dark chocolate (2 oz)
- 50 ml of water (2 tbsp)
Crepes
Put the flour, cocoa powder and plant-based drink into a bowl and mix well.
Let it rest for a few minutes.
In the meantime, heat a pan and put a little bit of coconut oil into a pan.
Pour some crepe batter into the pan and spread it evenly over the entire surface of the pan.
Bake for about 1 minute on each side.
Bake about 7 crepes from the mixture (depending on the size of the pan).
Cream
Whip the whipping cream and add mascarpone, vanilla extract, powdered sugar and liqueur.
Mix everything together to get a smooth mixture.
Forming a roll
Take one crepe, cover the entire surface with cream and roll it up.
Then take the next crepe, cover it with cream and place the previous rolled crepe on one end.
Roll both crepes together.
Repeat the process until you use all of the crepes.
