Vegan chocolate crepe roll

A delicious dessert that is extremely easy to prepare and does not contain eggs or milk!
Servings 10 slices

Ingredients
  

Crepes

  • 320 g flour (2cups)
  • 20 g cocoa powder (1/4 cup)
  • 530 ml plant-based drink (2 1/3 cup)

Cream

  • 300 g vegan whipping cream (1 1/3 cup)
  • 120 g of vegan mascarpone (2/3 cup)
  • 1 teaspoon vanilla extract
  • 40 g powdered sugar (1/4 cup)
  • 1 tablespoon vegan Baileys liqueur optional

Topping

  • 60 g dark chocolate (2 oz)
  • 50 ml of water (2 tbsp)

Instructions
 

Crepes

  • Put the flour, cocoa powder and plant-based drink into a bowl and mix well.
  • Let it rest for a few minutes.
  • In the meantime, heat a pan and put a little bit of coconut oil into a pan.
  • Pour some crepe batter into the pan and spread it evenly over the entire surface of the pan.
  • Bake for about 1 minute on each side.
  • Bake about 7 crepes from the mixture (depending on the size of the pan).

Cream

  • Whip the whipping cream and add mascarpone, vanilla extract, powdered sugar and liqueur.
  • Mix everything together to get a smooth mixture.

Forming a roll

  • Take one crepe, cover the entire surface with cream and roll it up.
  • Then take the next crepe, cover it with cream and place the previous rolled crepe on one end.
  • Roll both crepes together.
  • Repeat the process until you use all of the crepes.
