Vegan speculaas cookies

Ingredients
  

  • 250 g flour
  • 20 g maple syrup
  • 150 g margarine room temperature
  • 5 g gingerbread spices
  • 60 g of coconut sugar

Instructions
 

  • Put flour, gingerbread spices and coconut sugar in a bowl and mix.
  • Add maple syrup and room temperature margarine and mix until combined.
  • Form mixture into a ball, wrap it into plastic wrap and refrigerate for about 1 hour.
  • Sprinkle some flour on the surface and roll out the dough. Then use your favorite cookie cutters to cut out your desired shapes.
  • You can re-roll the dough as needed to cut out more.
  • Transfer the dough shapes to a pan covered with baking paper and bake on 180 °C for 8 to 10 minutes.
  • Remove from oven and transfer them to a wire rack to coll down.
  • Store them in an air thight container.
