Pizza with homemade vegan cheese

Tasty homemade pizza made from scratch.

Ingredients
  

Dough

  • 120 g (1 cup) spelt flour
  • 5 g (1 tsp) dry yeast
  • 1 teaspoon salt
  • 75 ml (1/3 cup) lukewarm water

Cashew cheese

  • 40 g (1/3 cup) cashew nuts
  • 150 ml (2/3 cup) water
  • 5 g (2 tbsps) nutritional yeast
  • 1 teaspoon salt
  • 1 tablespoon lemon juice
  • 12 g (2 tbsps) tapioca flour (or corn starch)

Other

  • 70 g (1/3 cup) tomato sauce
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 2 fresh tomatoes

Instructions
 

Dough

  • Put all of the dry ingredients in a bowl, mix, add water and knead into a dough.
  • Leave the dough in a warm place for 30 minutes.

Cashew cheese

  • Soak cashews in lukewarm water overnight to soften them.
  • Rinse soaked cashews and place in a blender, along with all of the other ingredients, and blend into a smooth liquid.
  • Pour into a pot and bring to a boil. When it starts to boil, stir constantly and cook for a few minutes to thicken.

Pizza

  • On a floured surface roll out the risen dough into a circle.
  • Coat it with tomato sauce and sprinkle with basil and oregano.
  • Spread the cheese evenly on the dough.
  • Add sliced tomatoes and bake for 20 minutes at 200 ° C (400 °F).
