Pizza with homemade vegan cheese

Tasty homemade pizza made from scratch.
Dough
- 120 g (1 cup) spelt flour
- 5 g (1 tsp) dry yeast
- 1 teaspoon salt
- 75 ml (1/3 cup) lukewarm water
Cashew cheese
- 40 g (1/3 cup) cashew nuts
- 150 ml (2/3 cup) water
- 5 g (2 tbsps) nutritional yeast
- 1 teaspoon salt
- 1 tablespoon lemon juice
- 12 g (2 tbsps) tapioca flour (or corn starch)
Other
- 70 g (1/3 cup) tomato sauce
- 1 tablespoon dried basil
- 1 tablespoon dried oregano
- 2 fresh tomatoes
Dough
Put all of the dry ingredients in a bowl, mix, add water and knead into a dough.
Leave the dough in a warm place for 30 minutes.
Cashew cheese
Soak cashews in lukewarm water overnight to soften them.
Rinse soaked cashews and place in a blender, along with all of the other ingredients, and blend into a smooth liquid.
Pour into a pot and bring to a boil. When it starts to boil, stir constantly and cook for a few minutes to thicken.
Pizza
On a floured surface roll out the risen dough into a circle.
Coat it with tomato sauce and sprinkle with basil and oregano.
Spread the cheese evenly on the dough.
Add sliced tomatoes and bake for 20 minutes at 200 ° C (400 °F).
