Healthy flour-free lemon cookies

Soft, refreshing and delicious lemon treat.

Ingredients
  

Cookies

  • 150 g oat flour
  • 10 g baking soda
  • 5 g baking powder
  • 1 teaspoon lemon peel
  • 50 ml lemon juice
  • 30 g agave syrup
  • 14 g coconut oil
  • 20 ml cold water

Drizzle

  • 20 g erythritol powder or powdered sugar
  • 5 ml lemon juice

Instructions
 

  • Put oat flour, baking soda, baking powder and lemon zest in a bowl and mix.
  • Add lemon juice, agave syrup, melted coconut oil and cold water and knead into a ball.
  • Divide the batter into 8 parts and form each one into a ball, flatten them and place on a baking tray lined with baking paper.
  • Bake for 10 minutes in a preheated oven at 180 °C.
  • Put baked cookies on a cooling rack and let them cool down.
  • Mix erythritol powder and lemon juice and drizzle the mixture over the cookies.
