Healthy flour-free lemon cookies

Soft, refreshing and delicious lemon treat.
Cookies
- 150 g oat flour
- 10 g baking soda
- 5 g baking powder
- 1 teaspoon lemon peel
- 50 ml lemon juice
- 30 g agave syrup
- 14 g coconut oil
- 20 ml cold water
Drizzle
- 20 g erythritol powder or powdered sugar
- 5 ml lemon juice
Put oat flour, baking soda, baking powder and lemon zest in a bowl and mix.
Add lemon juice, agave syrup, melted coconut oil and cold water and knead into a ball.
Divide the batter into 8 parts and form each one into a ball, flatten them and place on a baking tray lined with baking paper.
Bake for 10 minutes in a preheated oven at 180 °C.
Put baked cookies on a cooling rack and let them cool down.
Mix erythritol powder and lemon juice and drizzle the mixture over the cookies.
