Vegan bolognese rolls

Delicious, easy and soft rolls filled with bolognese sauce
Servings: 16 rolls

Ingredients

DOUGH
  • 400 g of flour
  • 9 g dry yeast
  • 1 teaspoon of salt
  • 2 dl of lukewarm water
FILLING
  • 2 onions
  • 130 g of red pepper
  • 3 cloves of garlic
  • 100 g soy mince + 1 dl water
  • 1 tablespoon of dried basil
  • 1 tablespoon of dried oregano
  • 1 teaspoon of salt
  • half a teaspoon of black pepper
  • 1 tablespoon sweet paprika powder
  • 50 g of tomato concentrate
  • 250 g of tomato puree
DRESSING
  • 100 g of vegan soy sauce
  • 1 tablespoon of nutritional yeast
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • half a teaspoon of salt

Method

DOUGH
  1. Put all the dry ingredients in a bowl, mix, add water and knead into a dough.
  2. Let the dough rise for 30 minutes in a warm place.
FILLING
  1. First, prepare the soy mince: boil water and pour it over the mince and let it stand for 5 minutes so that it is well soaked.
  2. Chop the onion and garlic into small pieces, and cut the red pepper into cubes and put them in a pan with water and bring to a boil.
  3. Cook for a few minutes, then add the soaked soy mince, spices and finally the tomato concentrate and pulp and mix everything well. Cook everything together for another 10 minutes.
  4. When the dough has risen, roll it into a rectangle and cover it with the filling.
  5. Roll it into a roll and cut it into about 16 rolls (easiest with sewing thread or lacquer, but you can also use a knife).
  6. Place on a baking sheet lined with baking paper and bake for 20 minutes in a preheated oven at 200 °C. Then pour dressing (for which you just mix all of the ingredients together) over rolls and bake for another 10 minutes.
