Ingredients
  

Dough

  • 42 g fresh yeast
  • 600 g flour
  • 340 ml plant milk (we use rice milk)
  • 25 g coconut sugar
  • 25 g coconut oil
  • 1/2 tsp salt
  • zest of 1 lemon
  • pinch of turmeric
  • 1 tbsp vanilla sugar

Walnut mixture

  • 600 g ground walnuts
  • 200 ml plant milk
  • 2 tbsp rum
  • 50 g coconut sugar
  • 1 tbsp vanilla sugar
  • 125 ml aquafaba

Prepared yeast is made from

  • 42 g fresh yeast
  • 6 tbsp warm water (not hot)
  • 1 tbsp flour
  • 1 tsp brown sugar

Instructions
 

Dough

  • For prepared yeast mix all ingredients (yeast, water, flour, sugar) together and put it on a warm place until it raises.
  • Put flour in a bowl and add salt on the outer circle.
  • Add sugar, vanilla sugar, lemon zest and turmeric, prepared yeast, coconut oil and rice milk in the middle and mix it together.
  • Cover and let it rest in a warm place for 30 minutes.

Walnut mixture

  • Blend walnuts and pour them with hot milk.
  • Add coconut sugar, vanilla sugar, rum and aquafaba (blend it with any sweetener until it gets really thick) and mix it well together.

Roll

  • Roll out the dough into a square, spread on the walnut mixture and sprinkle with 60g raisins.
  • Roll the dough and put it in a baking pan.
  • Let it rest for 15 minutes.
  • Then bake on 180°C and cover with baking paper when it gets a nice brown color. Bake for around 75 min.
