Roasted tomato with tofu

Ingredients
  

  • 330 g 11.6 oz / about 4 tomatoes
  • 1 onion
  • 150 g 5.3 oz tofu
  • 5 g 1 tsp olive oil
  • 4 sprigs parsley
  • 8 g 1 ½ tsp salt
  • a pinch of black pepper
  • ½ tsp turmeric

Instructions
 

  • Peel the onion and slice it into thin strips. Heat the olive oil in a pan, add the onion, and sauté over medium heat for about 5 minutes, until softened and fragrant.
  • Dice the tomatoes into small cubes and lightly drain them. Add to the pan with the onion and cook for about 5 to 10 minutes, until the tomatoes break down into a sauce.
  • Crumble the tofu and add it to the pan together with the chopped parsley, salt, pepper, and turmeric. Stir well and cook for another 5 minutes, allowing the flavors to blend.
  • Serve warm – it pairs wonderfully as a light main dish with a piece of bread, or as a side dish.
