Peel the onion and slice it into thin strips. Heat the olive oil in a pan, add the onion, and sauté over medium heat for about 5 minutes, until softened and fragrant.
Dice the tomatoes into small cubes and lightly drain them. Add to the pan with the onion and cook for about 5 to 10 minutes, until the tomatoes break down into a sauce.
Crumble the tofu and add it to the pan together with the chopped parsley, salt, pepper, and turmeric. Stir well and cook for another 5 minutes, allowing the flavors to blend.
Serve warm – it pairs wonderfully as a light main dish with a piece of bread, or as a side dish.
