Vegan apple cake

Soft and juicy vegan cake with apples & cinnamon.
- 225 g 1 1/2 cup white or semi-white flour
- 10 g 1 tbsp baking powder
- 5 g 1/2 tbsp baking soda
- 1 teaspoon cinnamon
- 60 g 1/3 cup erythritol
- juice of 1 lemon
- 220 g 1 cup apple puree
- 250 ml 1 cup plant based drink
- 40 g 3 tbsp margarine
- 40 g 1/4 cup vegan white chocolate (for topping)
Put flour, baking powder, baking soda, cinnamon and erythritol in a bowl and mix well.
Add lemon juice, apple puree, plant based drink and margarine and mix well with a whisk or electric mixer.
Pour the batter into a mold coated with margarine and bake for 30 minutes at 180 °C (360 °F). When the cake is baked, remove it from the mold and place it on a cooling rack. Pour over melted chocolate, cut and enjoy!
