Healthy vegan fall cookies

There’s nothing better in autumn than wrapping yourself in a blanket with a good book, cup of hot tea and delicious cookies! These delicious, healthy and juicy flourless chocolate pumpkin cookies are our go to snack for those cozy fall days.

They are healthy, quickly made and very tasty, as they are made with only healthy ingredients. Pumpkin spice provides a truly exceptional fall taste! Cookies are made without eggs, flour, oil and refined sugar. Instead of flour, we used oats and oat flour, and instead of oil, we used almond butter. You can also make the cookies in a gluten-free version by replacing oats and oatmeal with gluten-free kind. You can make your own oat flour by blending oats or simply buy oat flour.

Hokkaido pumpkin gives cookies a beautiful fall orange colour and pumpkin spices give the an amazing flavour that will make your whole apartment smell like fall! The icing on the cake is chopped dark chocolate, which perfectly complements the other ingredients and makes the cookies look even tastier!

 Ingredients and Process

These delicious, soft and healthy pumpkin spice cookies are made with only 8 ingredients.

These are:

  • oatmeal,
  • oatmeal,
  • pumpkin spice,
  • salt,
  • hokkaido pumpkin,
  • agave syrup– you can also use maple or rice syrup,
  • almond butter– you can use any nut butter (peanut, hazelnut…) ub
  • chocolate– we both use dark chocolate, but you can use your favorite vegan chocolate or chocolate chips.

Place oatmeal, oat flour, spices and salt in a bowl and mix. Add cooked and mashed pumpkin, agave syrup and almond butter and mix well. Stir in the chopped chocolate into larger pieces and form around 10 cookies, which we place on a baking sheet lined with baking paper. Bake the cookies for 8 minutes in a preheated oven at 200 °C. Place the cookies on a cooling rack and let them cool.

Ingredients
  

  • 60 g rolled oats
  • 40 g oat flour
  • 1 teaspoon pumpkin spice
  • a pinch of salt
  • 50 g pumpkin puree
  • 50 g agave syrup
  • 15 g almond butter
  • 40 g dark chocolate

Instructions
 

  • In a bowl mix oats, oat flour, pumpkin spice and salt.
  • Add pumpkin puree, agave syrup and almond butter and mix well,
  • Chop chocolate and mix it into cookie batter.
  • Form 10 cookies and place them on a baking tray.
  • Bake for 8 minutes at 200 °C.
