Mini bread buns with seeds

There is nothing better than homemade bread and the intoxicating smell that comes out of the oven during baking. The satisfaction you feel when you take out these golden baked buns with roasted seeds is invaluable. And the best thing is that these rolls are easy and fun to make! What makes these buns truly amazing is a coating made from molasses, water and seeds! The mixture of molasses and roasted seeds creates a truly delicious and crunchy crust, while the inside is  extremely soft and fluffy, all you can desire in a bread buns. You can use any seeds for coating, we used pumpkin, flax, sunflower and sesame seeds for a nice variety of rolls and an interesting look. But you can also use poppy seeds, chia seeds, hemp seeds, etc. These buns are perfect to pull apart and enjoy, as they are really amazing on their own. But you can also put some spread on, like hummus, chocolate spread, jam, nut butter… or even make mini sandwiches, which are also great to take on the go. Play around a bit and create interesting, delicious and unique buns of your own!

Ingredients and instructions

Making bread rolls is extremely easy, you only need 5 ingredients for the dough, which you almost certainly already have at home.

These are:

  • flour – we used semi-white flour, but you can also use white instead,
  • dry yeast,
  • salt,
  • water and
  • sugar.

Yeast dough is extremely easy to prepare, we use it for a huge variety of recipes, from savory to sweet dishes, and it works really well. When you have the dough ready, it’s time for the best part: shaping the rolls! Once you make the rolls, coat them with a mixture of warm water and molasses.  Molasses is a very thick syrup that is a byproduct of sugar refining process and is very healthy, unlike sugar. It contains a lot of vitamin B6 and various minerals, it’s especially high in iron, calcium, magnesium and manganese.

Finally, coat the buns with various seeds, which also make these buns more nutritious as they contain a lot of protein, healthy fats, vitamins and minerals, they are also very tasty and give the rolls a wonderful look.

Bread rolls with seeds

Servings 12 rolls

Ingredients
  

Dough

  • 500 g semi-white flour
  • 7 g dry yeast
  • 1 teaspoon salt
  • 300 ml lukewarm water
  • 1 tablespoon sugar

Other ingredients

  • 30 g molasses
  • 100 ml warm water
  • 30 g sesame seeds
  • 30 g sunflower seeds
  • 30 g pumpkin seeds
  • 30 g flax seeds

Instructions
 

Dough

  • Put flour, dry yeast, salt and sugar in a bowl, mix and add water.
  • Stir the dough slowly with a wooden spatula from the middle outwards, then knead it well with your hands.
  • Cover the dough and let it rest in a warm place for at least 30 minutes.

Making rolls

  • Once the dough is risen, divide it into 20 parts from each form a ball, soak in a mixture of molasses and water and roll in different seeds.
  • Put one next to the other in a baking dish covered with baking paper.
  • Cover and let it rest for another 15 minutes.
  • Bake for 20 to 30 minutes in a preheated oven at 200 °C.

    Thanks for the recipe, it’s quick and easy. The mini bread buns came out perfect. Love the way you did the seeds. Many times when we buy breads with seeds they fall out before you could even eat. But this time I had no issues with your recipe with seeds. Loved it they were well tucked into the buns and was easy to eat without them falling.
